Technique of the week–how to wash a gajillion strawberries

I learned this only *after* washing a flat and a half of berries with a strainer!  This way is much, much easier:
1) Fill giant bowl with your berries.
2) Fill giant bowl of berries with cold water.
3) Watch as berries float to the top, and swish them around gently with your hands, making sure there’s some moderate agitation going on in there. THIS is the key part, because all the dirt and sediment will separate and sink to the bottom, leaving your sparkly little berries floating up and out of the dregs.
4) Scoop berries out and use your favorite method to drain off excess water (strainer, dish towels, whatever).  If you simply pour the water out with the berries in the bowl, all the crud will just get all over them and you’ll have to do it again.
